Ingredients:
Clafouti is a French dessert, similar to flan, that is usually rich in sugar and cream. My version, inspired by “Shape” magazine, confines to Dukan diet – at least to the 3rd stage, “Stabilization”, that I am currently on.
Very easy to make, and comletely OK for all phases.
Wanted to title this post “Fish Quiche” but it just did not sound right 🙂 In fact, you can make it with any kind of fish canned in water, or leftover baked fish.
Ingredients:
1 pouch of light tuna or salmon (60 g or 2.1 oz)
1 egg, lightly beaten
1 teaspoon of ff Greek yogurt
1 teaspoon of fat-free mayo (such as Banquet or Walden Farms)
1 large shiitake or 2 smaller button mushrooms
1 small shallot, diced
Parsley, chopped
Salt, pepper to taste
Pinch of tarragon, spray of truffle-infused oil (optional)
FF non-stick spray
If anyone has an issue finding fat-free dairy for Dukan diet, or considers the cost of it being a bit too high, you are not alone. Here is an easy solution: make it yourself.

Seriously, it is not as hard as it seems – all you need is a lot of fat-free milk + small jar of fat-free yogurt (Greek is the best, I use Fage) as a starter culture.
Next thing you need is something to support body temperature outside of the body, for a period of 8-10 hours.
This is called “thermostat”.  Of course you can ask your husband, Grandma, or even your pet to sit on a top to keep your yogurt warm, but I don’t think that would be a practical idea. There are lots of things around your house that can assume the role of Grandma thermostat.
1. Dessert (of course!!!) – sweet puffs glazed in raspberry-flavored chocolate
This recipe was inspired by Gü products. I actually make it in Gü ramekins 🙂
Left – chocolate ganache with whipped cream, right – strawberry cream dessert.
 For chocolate ganache:
2 tbsp nonfat sugar-free cocoa powder
2 tbsp ff dry milk
1-2 tbsp water (adjust the amount if needed)
1/3 tsp xanthan gum
1 little bag of stevia
1/2 tsp vanilla extract
For whipped cream:
1.5 cups fat free half-and-half
1 tsp non-flavored gelatin
1 tsp stevia powder
1/4 tsp vanilla extract
Makes 4 large portions

Lean ground sirloin 1 lb
1 shallot, minced
1 garlic clove, crushed
1/2 carrot, shredded thick
3-4 average size mushrooms
1 tbsp balsamic vinegar
1/2 cup ff chicken stock (or replace with water and dry chicken stock)
1 lb cauliflower
2 tbsp fat free cottage cheese
Ff nonstick spray

Raw shrimp 1 lb, cleaned, de-veined, washed and dry.
Cooked shrimp can be used instead
1 shallot, diced
Dry chicken stock for seasoning
Tofu shirataki pasta substitute
Skinny Alfredo sauce ( no cooking required;Â tastes very authentic)
Ingredients for Alfredo sauce:
FF Half-and-Half, 1 cup
Garlic, 1 clove, crushed
Parmesan-Romano low fat powder 3 tsp
Xanthan gum 1/2 tsp
Salt, pepper, Italian seasoning to taste
