Shrimp Alfredo


Raw shrimp 1 lb, cleaned, de-veined, washed and dry.

Cooked shrimp can be used instead

1 shallot, diced

Dry chicken stock for seasoning

Tofu shirataki pasta substitute

Skinny Alfredo sauce ( no cooking required;  tastes very authentic)

Ingredients for Alfredo sauce:

FF Half-and-Half, 1 cup

Garlic, 1 clove, crushed

Parmesan-Romano low fat powder 3 tsp

Xanthan gum 1/2 tsp

Salt, pepper, Italian seasoning to taste

1. Make Alfredo sauce in advance:  place all ingredients in blender or  food processor and whip up until uniform.

2. If using cooked shrimp, skip to step 3.  For raw shrimp: spray non-stick pan with cooking spray, saute shallot until transparent, reduce heat to medium, add shrimp, cook until shrimp becomes opaque (do not overcook!)  Season with dry chicken stock.

3. Add Alfredo sauce to shrimp, heat through.

4. Rinse tofu-shirataki pasta in water very well, to rid it of specific smell, let it drain, heat in microwave with chicken stock or a bit of Alfredo. If no pasta substitute is available, it can be replaced by steamed spaghetti squash.

5.  Serve shrimp over pasta.
