Very easy to make, and comletely OK for all phases.
For the filling
1 tub of fat free cream cheese (12 oz)
1 egg, separated
1/3 cup of Pyure Bakeable Blend (1)
½ tsp vanilla extract
¼ tsp chocolate extract (2)
¼ tsp raspberry extract (2)
Pinch of salt
For the crust (for third phase, this can be replaced with 1 tbsp of graham crumbles):
1 tbsp fat free yogurt
1 tbsp oat bran processed to flour
Pinch of salt
1 tsp stevia or few drops of Sweet-n-Low
Note 1: This product contains maltodextrin +stevia, and has zero calories.
There are other products with similar name but are, in fact, stevia+sugar, so make no mistake. There are also similar bakeable products with Splenda and maltodextrin, they are OK to use.
Note 2: This flavoring is optional but will result in delicious raspberry chocolate flavor.
Preheat oven to 400 F.
Start making crust: mix all ingredients, put them into silicone or glass mold and microwave for 1-2 minutes (depends on your microwave power).
When it is firm, take it out, do not let it brown. Browining in microwave is not a good idea.
You can brown it in a regular toaster, or leave it in heated oven while working on filling. When done, let it cool for few minutes, break into pieces and process to crumbles.
Lightly spray your baking dish with non-stick spray, and cover the bottom with crumbled crust.
For filling, warm cream cheese in microwave for 30 sec, mix it with egg yolk, salt, flavoring and sweeteners. Beat egg white to soft peaks and add to the cream cheese, mix lightly until uniform, pour into baking dish.
Place your dish into larger heat-proof container filled with hot water, and place it into the oven. Bake for 30-40 min, until set. Cool, and refrigirate overnight.
Can be served with fruit topping:
Few raspberries or one large strawberry (sliced), mixed with 1 tsp of Bakeable Blend, place into small glass dish and heat in microwave for 1 min.
