Clafouti is a French dessert, similar to flan, that is usually rich in sugar and cream. My version, inspired by “Shape” magazine, confines to Dukan diet – at least to the 3rd stage, “Stabilization”, that I am currently on.
5 large eggs
4 ripe plums (can be replaced by nectarines or peaches)
3/4 cup Splenda (bakeable blend), or other bakeable sweetener.
3/4 cup fat free Greek yogurt
1 cup fat free milk
3/4 cup corn starch
1/8 tsp salt
2 tsp vanilla extract
Heat oven to 375 F (190C), spray baking dish with cooking spray (I use silicon baking dish and Pam spray for baking).
Beat eggs slightly, add sweetener, milk, yogurt, salt, vanilla, mix with spoon just until uniform, add corn starch, mix again.
The batter will be thin, this is normal. Pour it into prepared dish and place halved plums or peaches on the top, cut side down.
Bake for 1 hour, let it cool slightly, serve warm.
