Quiche Lorraine

Fat-free Quiche Lorraine does not have a crust but is still very good and proper for the “attack” phase of a diet.
It is delicious both hot and cold. The amount makes for two servings.

2 eggs
two slices of fat free low sodium turkey breast (from deli or T-giving leftovers)
1-2 mushrooms (white button, portabella or shitake)
2 tbsp fat free cream cheese
1/2 tbsp fat free parmesan powder (watch for nutritional information, the one I used had around 1% of fat)
Pepper, parsley, tarragon

Dice turkey breast and mushrooms, beat eggs slightly,  mix all components, add salt if necessary.
Pour into heat-resistant glass or ceramic dish sprayed with non-stick spray, and bake at 350 F for about 20-25 min. If you want it creamier, then reduce baking time.
