Belgian Waffles

Makes 4 light and fluffy waffles. Appropriate for “attack” phase.

1 egg, separated

1 tbsp fat free yogurt

1 tbsp fat free quark

1 tbsp oat bran

1 tbsp wheat germs

½ tsp aluminum-free baking powder

½ tsp stevia

½ tsp vanilla extract

Pinch of salt

Non-stick spray

Heat the waffle iron.

Wheat germs and oat bran process together into flour. Beat the egg white.

Mix oat bran flour with baking powder, stevia, salt, mix in egg yolk, yogurt, quark, vanilla.

When it is more or less uniform, add egg yolk.

Cover the surface of waffle iron with non-stick spray and bake per waffle iron manual.

Can be served with fat-free whipped cream.
